Breakfast for a busy bee - Beginner series
Hi All
Breakfast has now become mostly a glass of Orange Juice and toast. Of course growing up it was different for most of us, there will be elaborate meals with healthy fruits, milk /cofee/juice. For a south Indian, Breakfast is very important. Its just that breakfast is so versatile for us that you cannot imagine skipping something so delicious.But for a working person including me, our corporates demand most of our time which makes it impossible to make elaborate meals. Today we will discuss some quick, on the go type of Pseudo Traditional modern Breakfast items Keeping the Indian palatte in mind.
Before starting, there are some tips Id like to share as a form of meal plannning. You see, certain advanced preparation in the weekend or maybe a readymade cheat can help you ace breakfast Making a pleasure
Tip1 : Make Idly / dosa batter during weekend, It will last for a week. I normally buy local batter readymade from stores. If you need to know how to make Idly / dosa batter, please let me know.
Tip 2: Making Pooris are easy but rolling out the atta / Flour is time consuming. You can knead the dough and roll the pooris in advance during the weekend or the night before and Freeze them. What you do it seperate each poori with either a kitchen Paper or a butter paper / cling wrap .Did you know that this is how Pooris are made in restaurants, One of the chefs on TV even said that this ensures you get nice puffed pooris, Now I'm not sure about that but mine are mostly puffed up and they are usually frozen .
Tip 3: If you like Oats, You can prepare Oats in a different way that night before directly into a Tiffin box or Food container, All you do is soak the oats in Milk and sugar/Honey / Fruits( whatever you generally eat it with ) and leave it in the Fridge, Next morning you can simply take out this container and pack it for eating it while travelling or in office. Such a nice option for busy people who always get late , Plus its super healthy.
Tip 4: Dosas are easy to make , but they are very time consuming, If you do have a dosa craving, Keep two tawas and parallelly make dosas on both tawas . This will reduce cooking time by half.
Tip 5: Upmas and Pohas are amazingly delicious and quick, but you can never prepare these in advance, also it requires chopping up of Onions , ginger etc, Hence instead of these, try making pongal in a pressure cooker, its simply an addition of all ingredients , 3 whistles and you are done.
Tip 6: As is the case of Idly batter, Making sambar in advance is an option. Did you know that sambar can be stored very easily as its made with tamarind. Also its one of those dishes wherein the taste increases as the days progress ( similarly spicy kerala fish curry with kokum)
Tip 7: Substitute chutneys for Idly podi / Karapodi which is prepared/ store bought .
Tip 8: At least once a week , go for an all fruit / vegetable smoothie. This smoothie need not be prepared freshly. Prepare the smoothie without adding the milk and freeze them the night before. Next day morning, boil some milk and add to the frozen mixture first thing after you get up. By the time you are ready, your smoothie will be perfectly thawed and ready to be consumed. Took no time at all right?
Tip 9: Making vadapav is difficult. But use the pav , stuffing it with a simple egg burji mixture and a slice of Cheese .
Tip 10: Eggs are your best friend when it comes to healthy filling and time saving meals, Options like potato omlette,Boiled egg sandwich with green chutney, Egg katti rolls( If you have leftover chapatis from the previous night) are all great options.
Tip 11:Making some extra Idlies one of the days is a great way to save time another day. Leftover stale idlies make amazing snack items or side dishes for breakfast like masala idly, fried idly, Chinese Idly Manchrian etc.
Tip 12: There is no harm in making ramen or Maggi as a breakfast dish if you are a bachelor, You can make it healthy by adding eggs, easy to cut vegetables or even eat it with cheese or yogurt( its pretty good). I'm not sure why no one eats maggi if you are in a hurry. Literally its the easiest filling food, Of course its not healthy,but hey once a while wont matter.
Tip 13: Always try and substitute milk and coffee/tea with Orange juice which is both healthy and easier on the stomach.
Tip 14:Prepare Green chutney ( I will post a recipe for this) in Advance, it stores well in Fridge. Have a ready made cheese spread or Mayonaise. If you have leftover chapatis or bread . U can simply heat it a bit( actually optional) and eat it with the chutney and an egg or some sliced tomatoes n Onion.
Tip 15:For those sweet cravings in the morning, Microwave some plantains( loaded with Potassium which is very essential)for 2 minutes with skin on, once done, remove skin, and mash the plantain , add sugar and heat it again for a minute and leave to cool. You can eat it as is or with Rava Upma/ Steamed puttu etc.
